Your health coach or practitioner tells you to give up dairy for a month or two or perhaps it’s better to stay off of it longer. This may seem like a daunting and overwhelming task, after all, dairy is everywhere and nearly in everything processed. How do we do this without sabotaging our best intentions?

Gluten and Dairy Free Lasagna


*you will need a 13 X 9 X 2 inch glass baking dish

Gluten free lasagna noodles (DeBoles – no bake noodles work great)

1 jar of marinara sauce

One batch of home made cashew cheese

Spinach (if veggies are desired)

Optional – adding browned ground beef or sausage to another batch of marinara sauce and using both sauces interchangeably.


Preheat the oven to 400 degrees

Take the 9×13 dish and first layer the basic marinara sauce and a layer of noodles on top. Then a thick layer of meat sauce (if meat sauce is used) and another layer of noodles. Next comes the ricotta and more noodles on top. One more thick layer of meat sauce and more noodles. Top those with the marinara sauce. You will have some extra sauce- reserve it to for after the lasagna is baked .

Bake at 400 with foil on top for 30 minutes. Top with extra marinara sauce once baking is complete.

  • ½ cup unsweetened almond milk
  • 2 Tablespoons rolled oats
  • 2 Medjool dates
  • ½ cup frozen banana (about ½ medium banana)
  • 1 sheet of 4 graham crackers


  • In a blender, combine almond milk and oats, and purée until completely smooth.
  • Remove the pits from the dates, and add them to the blender. Blend until smooth.
  • Add the frozen banana, and blend until smooth.
  • Add most of the graham cracker, and pulse a few times for a crunchy texture, or blend until smooth.

Serve and crumble remaining graham cracker crumbs on top.


Dairy Free Cheesecake


For the crust:

1 cup of almonds

6 mejdool dates

1 TB of coconut oil

one pinch of salt


For the filling:

3 cups of raw cashews soaked overnight in filtered water

½ cup of fresh squeezed lemon juice

½ cup of honey

½ cup of coconut oil

2 teaspoons of vanilla extract

one pinch of salt



For the crust –

Put the ingredients for the crust into the food processor and pulse until it resembles a crumbly texture. Be careful not to over process or you will end up with almond butter which in itself is extremely tasty but not what you want to make in this case.

For the filling:

Place all of the filling ingredients into a food processor and blend at maximum speed until the consistency is very smooth and there are no lumps. Place the filling on top of the crust and let it sit in the freezer to “set” for 2-5 hours.
